Hello Summer!!!

I haven’t posted in almost a month, but finals consumed my life, literally!!!! I don’t think I’ve EVER, pulled so many all nighters!!! At least twice, I went over 50 hours without sleeping!! Bad, I know, but I just can’t sleep before a final knowing that there’s more information that I could be absorbing!! I’m not one of those who believe that “if you don’t know it now, you’re not going to know it,” No, not true, at least not for me. I study, study, study till the last-minute!!! The day before a final, my phone goes on silent, Facebook gets deactivated & I take a seat at the dinning room table. Getting up only, to go to the bathroom and stretch my legs (sitting for 24 hours is so painful on your knees).  Hopefully, all the hard studying pays off. (Side note, This is on top of all the studying I did all semester, law school is no fun)

It’s finally all over now =) My last final was yesterday at 2 pm and I’m now a 3L (third year law student). I officially only have 1 year left of law school =)  So what am I going to do this summer??? absolutely nothing!! This is my last summer before the real world starts, so I’m going to enjoy it. I considered taking some classes, but decided against it, since my school requires me to take 12 credits every semester. It would be pointless to take more classes when I only need 28 credits left to graduate, and I usually take 14 a semester.

What have I done in my first 36 hours of summer…… SLEEP!!!!!! My body clearly needed it. I didn’t officially wake up till about 6pm today!! that’s almost 19 hours of sleep, crazy huh? Oh well, sometimes you just have to listen to your body. Now, I’m catching up on all my DVR’d shows, ( I must have about +30 hours on there =) I can’t wait) & reading up on all the blog posts that I’ve missed. Tonight Julie, posted an amazing recipe for peanut butter cookies!!! Once I saw that it only had 3 ingredients & that I had all the ingredients. I headed straight to the kitchen.

Mix the ingredients: 1 egg, 1 cup of sugar & 1 cup of peanut butter:


Roll them up into little balls

& then Bake at 350 degrees, for about 13-15 minutes.

Holy Yum!!! They were amazing!!!! I’ve had 3 and probably headed soon for my 4th!!! Dad’s already had 4!!! Thank you Julie for the great post!!! I’m sure I’ll be making them again!!!!

That’s all for now, I’m going to start doing all my backed up laundry, that I’ve neglected for the past month. Clearly my body is still on my nocturnal finals schedule. =(

PB & Chocolate!!!

Hi!! Hope everyone is having a great weekend so far. Mine has been spent in the library :-/ and to make matters worse, I’m coming down with a cold. So today was extra hard!! All I wanted was to come home and snuggle in bed with a good movie. I spent about 7 hours studying so it wasn’t all bad (As for what I learned?? Not too sure). Ever feel like it just doesn’t click?? That’s how business associations is =(. I took my sister to the library with me today, so it was a nice treat.We came home after I realized my brain was at maximum capacity for the day.

Mom had made a delicious salad. It had a mixed medley of greens, shrimp, tomatoes, avocado, mushrooms, cheese, hard-boiled eggs and cucumbers. It was yummy. I saved the left overs for my lunch tomorrow at the library (I’ll try and remember to take a picture)

Before dinner my sister and I decided we wanted to bake something (We have HUGE sweet tooth’s & just ♥ to bake). We found a box of brownies in the cabinet and decided to make brownies w/ a special twist!!!  We’ve been eating peanut butter like its going out of style lately and I suggested making chocolate peanut butter brownies. She loved the idea and we began our experiment. Let me begin by saying I had never added PB to brownies and wasn’t sure how I was going to do it. I quickly looked on some blogs for any ideas, and to no avail, I decided to just create my own. While Gigi (My sister) started mixing together the ingredients, she realized we didn’t have enough oil. So I substituted apple sauce, which I had never done before, but I know its a healthy substitute.

I melted some PB in the microwave . Poured the brownie mix into the baking pan & then drizzled the melted PB over the brownie mix. Baked for 24 minutes (Directions said 25-29 minutes, but I like my brownies mushy). End product….. Delicious.

I had 2 slices and a big glass of milk & now getting ready for a movie date on the couch with my Mom & sister!! xoxo

Ugh finals. probably the most dreading part of the semester, for any law student. I prepared my study schedule for the semester and once I realized, what I actually have to study “I FREAKED OUT”!!!! One of my classes, i need to read 1000 pages (2 different books, 500 pages each) of super dense business material. That’s my first final. May 3. As for the rest, I need to still work on my outlines for the others =( needless, to say the next 4 weeks will be anything but fun!

This morning I had breakfast as usual, Oatmeal! I honestly never get tired of this. And the more raisins the better =)

The latest craze on the blog word is the Green Monster (“GM”). I’ll admit I was very reluctant to try it. Maybe because of its Icky color? This didn’t stop me though from spreading the word to everyone else and convincing them to try it (hehe, part of my scheme to make sure it was good, before “I” tried it. They were my “test bunnies”) Well, I finally had all the ingredients at home and decided I should “man” up and try it.

What’s the verdict? ………. I wasn’t a fan! Maybe, I didn’t do it right?? I followed the Green Monster Movement, virgin recipe! I used:

  1. Ice;
  2. few handfuls of spinach;
  3. some regular (cow’s) milk;
  4. a banana; and
  5. then some Nesquik (I didn’t have any protein powder, I figured Nesquik chocolate milk powder, would give it that chocolatey kick). =)

The first sip was ok and then it just went down hill from there. I had my brother and sister try it too, they agreed with me, it just wasn’t that great. Ok, but not great.  Which didn’t make sense, because all of my “test bunnies” loved it and have it all the time now. Maybe I should try adding a scoop of peanut butter?? I will it give it another try (maybe not for a few weeks though). Ok I’m off to the Library, I spent 11 hours there yesterday and mentally preparing myself for another long day. Wish me luck!!!!

Welcome Back!!!

Wow, it’s been awhile since my last post ( 5 months =/ ) I’ve kept up with the blog world, just not with “my” blog. This isn’t to say that I haven’t thought about my blog though. Over the the last few months, I’ve constantly  pondered the idea of what I wanted to write about and what direction I wanted to take my blog in. I read all sorts of blogs, food, fashion, fitness, etc. Some days, I really wanna do a food blog and share everything I eat and all the yummy desserts I make (I have a HUGE sweet tooth). Other days I want to write a fashion blog and share all my fabulous fashion finds and wants. Other days I want to do fitness blog (on my bucket list is running a marathon, and I figure writing a fitness blog about my training up to the marathon will help me stay motivated). Then some days I want to write about my love for traveling (one of my true passions in life) and then other days I just want to write about life in general, the good, the bad and the up’s & down’s. So since I haven’t made up my mind about what topic I want to write about, I’ve decided (literally 2 seconds ago) that I’m going to write about all of those things. It’s my blog right? I can write about whatever I want =)

So I guess I should start with a recap of the last 5 months huh? My life has been great, I really have no complaints. I’m beginning to study for my law school finals (I’m in the end of my 2nd year & can’t believe I only have a year left eeekkkk). I’ve done a lot of traveling this year (which I’ll share in a later post) and have loved every trip!! I’ve found many delicious desserts recipes (which I’ll also share). And I’m trying to find the courage and motivation to start training for a marathon. My goal is to run in the Disney Marathon, which is in January of 2011. I figure 8 months away is plenty of time to train for a marathon (Keep in mind though, I’m not sure if I can even run to the corner right now) Well, Thats all for now. I need to get back to studying, criminal procedure is calling my name =(

I’ll leave you though with a picture of my new obsession (I have it practically every morning) Pumpkin Spice Oatmeal, holy yum. ( Ok my iphone must have eaten the picture, this is not my picture but you get the idea)

  1. I heat up some water (I’m really picky though and only use Zephyrhills water, I’m a firm believer that ALL water tastes different)
  2. Empty a packet of Quaker Oat Instant Maple Brown Sugar Oatmeal into a bowl
  3. Sprinkle “POUR” Pumpkin Pie spice over Oatmeal
  4. Add some Granola to Oatmeal
  5. Then add boiling water to the bowl, mix it all together and get ready for a PARTY in your mouth =) I have to thank the blog word for this wonderful creation, especially Caitlin, of Healthy Tipping Point.

Goodbye Fun, Hello Finals.


Some friends started asking me about my blog and I’ve realized that I haven’t written much. I started this blog almost a month ago and I’ve only had 3 posts. I’m sure though with the endless hours I will be spending in the library this month, it will constitute numerous blog posts. So stay tuned. I just had my last weekend of fun (at least until Thanksgiving and my trip to NYC) We took my cousin Raissa and 15 of her friends to Casa de Campo (CDC) this weekend & it was SOOOOO MUCH FUN!!! but then again CDC  is always a great time.  The weekend started on Thursday for us, My Aunt had her MIRMIA event, for the MIR Foundation. I spent Thursday running around Miami getting everything ready: packing,  getting Raissita’s present and my outfit for the event. Last minute I decided  to wear a new dress I’ve had since last year and never worn (I had never worn it because I didn’t have shoes for it (shoes at least that i liked for the outfit)). Clearly not having shoes didn’t stop me though. It just meant I needed to go shopping for new shoes. I found a gorgeous pair and after quite the adventure running around Miami to  find them in my size, I got them. The event was super fun and a great beginning to the weekend.

Friday morning, we were off 7 of us left Palm Beach early in the morning and the other 9 girls flew in later that day. We arrived around 12, after a quick pit stop to pick up Alfy in the bahamas and had a great Casa Grande lunch ( the food in Casa Grande is so good, I literally starve myself the week before I go because the amount of food consumed is ridiculous)

After lunch My aunt and I boarded a helicopter and went to pick up the other 9 girls who were flying into the Capital. So much fun!! The girls were all so excited, most had never been to the Dominican! & Boy did they get quite the welcome all the Dominican men had never seen so many beautiful girls. Imagine 11 beautiful girls walking through the airport, it caused quite the stir. hehe

Friday Night, we went to La Marina and had a yummy Dinner at Pepperoni and then went out to continue the celebration in Altos at Papa Jacks.

Saturday we went out on the boat to Palmilla and had a great time on the boat dancing and singing (& of course eating)


Saturday night we invited some of Raissita’s Dominican friends and a dinner party for her at the house (so much fun) after more yummy food and champagne we all boarded the bus (yes bus that’s how you transport 17 girls around cdc) and continued the celebration.


Sunday we had a wonderful sunday brunch in Casa Grande (I LOVE LOVE LOVE sunday lunches at CG, we always have the same thing: arroz, picadillo and juevo frito, translation – rice, ground beef and a sunny side egg, it’s a very traditional hispanic meal and SO SO YUMMY)

After lunch we for I think the third time sang Happy Birthday to Raissita and then headed back to Palm Beach. It was a great weekend and so much fun!! Raissita had a great 18th birthday and we can’t wait till we go back. Probably for New Years (I went last year and had the BEST new years EVER!!)

Trick or Treat!!


It’s that time of the year . . . Halloween!!!! Though, I must admit it’s one of my least favorite holiday ever (closely behind is valentine’s day)  I’m some what excited this year. Not necessarily for Saturday (Halloween day) but for the weekend itself. It’s our (the boys and me) last weekend of partying before the gruesome studying for finals begins. & we’re going out with a bang!!!!  We are going out tonight – girls night tonight at my house, champagne and pre-drinks (we are celebrating being done with our oral arguments YAY!!) and then we are meeting the boys out and having a fun night out. Friday (as custom) LIV with tables and bottles. & then Saturday bottles again. Like I said we’re going out with a bang. So it should be a fun weekend!! Sunday will definitely be a day of recovery =)


With the new season, you tend to see pumpkins EVERYWHERE!!!! & I Love it!!!! I love pumpkins, I could eat them everyday!!! Pumpkin cookies, pie, bread, muffins, shakes, soup, everything. I recently discovered  pumpkin spice and I’m obsessed!!!! I put it it in everything, my oatmeal, granola, ice cream (it’s actually good)!!! I’m also ALWAYS looking for new recipes that have pumpkin in it! With that said if you have any please please please share (especially sweet recipes, I ❤ those)

Sorry, Sorry, Sorry!!! Everyone’s been asking about the blog and why I haven’t updated. As much as I would love to say:  it’s because I’ve been super busy with school and life. It’s not true, I’ve just been slacking!!!! So update: Last week I had to take a break from running for a few days. 1. because I could barely walk after Tuesday’s run (I didn’t realize how important stretching really was) and 2. because I needed new shoes (my old sneakers were hurting my toes A LOT). I finally got new sneaker this week My new sneakersThey are super cute and I ❤ them. It’s funny because Papi bough them for me on Monday and I couldn’t wait for Tuesday morning to come so I could get up and go running!!! Nothing like new shoes to get you motivated again =)

I’ve been sort of busy with school. It’s coming up to that time of year when I become a recluse person who lives (literally) in the library =( ugh I’m not looking forward to it. I study for an entire month straight for finals and not to mention pull numerous all nighters. I won’t lie, it sucks!!!! But, to be honest I can’t complain I’ve had a great semester filled with lots of fun and great times (proof: the picture below, this was Friday night at Liv. Liv has become our Friday night spot this semester!!)


Although the fun will be ending soon. I have a couple good weekends left!!! I have Halloween next weekend (still have no idea what I’m going to be, I was thinking maybe a sexy snow white??) Then the first week of November, I have the MIRMIA event on the 5th, which will be tons of fun (although, I’m frantically trying to find a cute dress. I went today to 2 malls and nothing). Then on the 6th I’m flying out to Casa de Campo!!!! It’s Raissa’s Birthday and her best friend- Nicole, Mom- Raysa and I are throwing her a huge party!!  We fly over Friday morning, Saturday we’re going to Palmilla all day on the boat and then having a huge party at the house that night. Sunday (the day of her actual birthday) we’re having a brunch at the house (yum, I love sunday brunch in Casa Grande – Arroz, Picadillo and Guayaba cookies). We fly back to Miami on sunday afternoon and then continue the celebration with Uncle Jorge!!! I can’t wait, it’s gonna be great!!!

Oh yeah and how could I forget, next week I have to argue my appellate case in front of 3 (REAL) Judges!!! Ugh not excited, But i did buy a super cute new suit!!! =)
